
VINTAGE
In 2018 we continued to work closely with our favorite local growers throughout the broader Napa Valley. The backbone of this blend comes from Ink Grade (on the back side of Howell Mountain), which provides the framework and structure to carry this wine. This site is complemented by Oso Vineyard, which is in very close proximity, our Estate Vineyard in the Stags Leap District, Blue Tooth Vineyard down the road from Odette in Oak Knoll, and Las Amigas Vineyard in Carneros. These sites come together in unison to create a beautiful expression of Cabernet Sauvignon. This diversity and range in Napa Valley has allowed us to craft a wine which showcases the unique terroir in an approachable, elegant style.
FERMENTATION & AGING
Fermentation took place in small fully jacketed stainless-steel fermenters after a 48-hour cold soak at 55°F. The stainless-steel fermenters showcase the purity of the fruit while preserving the freshness and allowing the terroir to shine. Maceration lasted 8- 14 days at a maximum temperature of 92°F. Malolactic fermentation took place in barrel and finished up in late winter. The wine was aged in 50% new oak and 50% one-fill oak barrels with minimal racking for 18 months before bottling.
WINEMAKER IMPRESSIONS
The 2018 Adaptation Cabernet Sauvignon is opaque purple in color, presenting notes of wild blackberries, luxardo cherries, plums, creme de cassis with hints of fresh spring flowers. This full-bodied expression displays beautiful ripeness with elegant, very fine, well integrated tannins and a gorgeous silky texture. Built for near term appreciation and long-term potential, this forward, upfront and approachable style can be enjoyed over the next decade+.
